Baked Spaghetti Squash & Sweet Pumpkin with Sassy Almond-Sesame Sauce
Zenna's SASS of Choice!!!
Preheat oven to 350 degrees. Wash and cut in half, a spaghetti squash, and place, cut side up on a baking pan. Brush with sesame oil.
Do the same with a small sweet pumpkin - sometimes called a 'pie' pumpkin. Bake for about 30 minutes; 'til a small knife inserted meets little resistance. Remove from oven and cool 'til they can be handled.
With a heavy fork, coax the 'spaghetti' out of the shell onto a warm serving plate. It's fun to serve with the spaghetti spilling out of the shell. Cut the pumpkin into wedges, brush lightly with sass and arrange with the spaghetti.
Drizzle Sassy Almond-Sesame Sauce over this simple dish, garnish with a few colorful veggies and sprinkle on a few sliced almonds, if desired. Deeelish!
