There are many other possibilities, as far as ingredients are concerned; what is important is that we have fun with the preparation and enjoyment of these healthy dishes.
Tiny Red Potatoes
Preheat oven to 350 degrees
Trim Brussels Sprouts, cut in half, and marinate in a bowl with your choice of SASS for five minutes. Then arrange cut-side up on a parchment-lined baking sheet with sides.
Next, cut carrots into half-to-three-quarter inch rounds, toss in same SASS to coat, and arrange on parchment with Brussels Sprouts.
Then toss halved tiny potatoes to coat; arrange on baking sheet.
Last, cut cauliflower into florets, toss in SASS to coat, and arrange on baking sheet.
Bake all for about 30 minutes. Halfway through, dab on more SASS with a brush, and continue to bake. Remove veggies from oven when they become tender, and if desired, dab on a little more SASS.
Arrange separately or mixed in a serving dish or on a platter with toothpicks and a little bowl of SASS for dipping. Enjoy warm, room temperature or chilled. Easy, delicious, healthy, and you'll still have room for dinner! Of course, this can also be included as part of the dinner menu itself.
