Red Potatoes & Sweet Red Onions Baked with Zena’s Sassy Almond- or Peanut-Sesame Sauce!

This is an easy and fun way to prepare Potatoes and Onions. The result is a delightfully satisfying comfort food.
1 Large or 2 Small Sweet Red Onions
10 to 12 Small Red Potatoes, or other Veggies of Choice, such as Yams, Sweet Potatoes, Acorn or other Squash...very flexible recipe
Zena's Sassy Almond- or Peanut-Sesame Sauce, Original or Hott! Enough to coat veggies; half to three-quarters Cup
Preheat oven to 350 degrees. Leaving the root end intact, cut each onion into eight wedges still connected at the root, and remove the papery skin. Brush on and marinate 5 minutes in SASS. Lift the onion wedges, and arrange on one of the flat sides on a parchment-lined pan with sides.
Wash, dry and cut the potatoes in half, then toss in the remaining SASS to coat. Place potatoes on the parchment, cut side up. Leave spaces so caramelizing will happen on tops and sides.
Bake for about 30 minutes, brushing with a little more SASS at about the 15-minute mark. As they bake, the onion layers will begin to 'blossom' and expand.
Brush on a little more SASS the last few minutes, and when all is caramelized and fork-tender, transfer to a warmed platter and serve immediately...enjoy the beauty and flavor of this elegantly simple side dish! If there are any leftovers, this is delicious with eggs or cut up in a salad!
